Schnipo (homemade schnitzel and french fries)

Schnipo is a meal loved by all kids in Switzerland and also one of the most popular dishes for grown-ups and kids alike in Swiss restaurants. Most Swiss people have fond memories of eating Schnipo for lunch on the ski slopes during their day- or week-long ski trips.  Schnipo means SCHNItzel POmmes Frites or, in English, Wiener schnitzel with french fries. In the restaurants, the schnitzel is either made with pork (cheaper dish) or veal (more expensive dish). We like it with chicken breasts too, which is what I mostly use when I cook it for my family; it’s a lot cheaper than veal and the chicken schnitzel always turn out soft and juicy.

I hadn’t planned to cook this yesterday but was faced with two hungry children, only 20 minutes to prepare dinner and there were chicken breasts in the fridge and oven fries in the freezer. It’s quick and delicious! As for the breadcrumbs, I usually make my own with our stale bread. Every two months or so I use up all the stale bread, using my Nutribullet to turn it into delicious breadcrumbs.

Recipe for 4 people

  • 4 chicken breasts (or veal or pork)
  • 1 egg
  • 1-1.5 tbsp flour (depending on the size of the egg)
  • 5-10 tbsps breadcrumbs
  • oven fries
  • salt, paprika and pepper
  • olive oil

Method

Heat up the oven and bake your oven fries according to the instructions.

To flatten the chicken breasts, place one chicken breast onto a chopping board, cover it with clingfilm or a plastic bag and beat it with rolling pin until it’s nice and flat. Repeat with the remaining chicken breasts.

In a bowl, thoroughly mix the egg with the flour.

On a plate, mix the breadcrumbs with salt, pepper and paprika. Stir well.

Dip one flattened out chicken breast into the egg mixture until every part of the chicken is covered in egg. Then put it onto the plate with the breadcrumbs and cover it in crumbs.

In a frying pan, fry the breasts in 2-4 tbsps of olive oil on both sides until browned and crispy. Note: When frying meat, always heat up the pan first and only add the oil once the pan is very hot already.

Serve the schnitzel with lemon juice and the fries.
