While Swiss beetroot is available all year round (freshly harvested from spring to autumn and stored in cool warehouses over the winter months), for me it’s a typical vegetable to fall back on during the winter months, because in summer there are so many other locally grown vegetables available. This smoothie with raw beetroot is not only delicious but also packed with vitamins. You shouldn’t eat too much raw beetroot but up to 200g per week is ok, according to Gemuese.ch.
Ingredients for two servings
- Half an apple
- One small orange
- As much raw beetroot as apple
- 3-4 ice cubes
Wash the apple, peel the orange and peel the beetroot. Cut all in pieces and add to a mug together with the ice cubes. Cover with water (or a little more water, depending on how thick or runny you like our smoothies). Blend and drink!
