Chocolate Stick Bread Snakes (Schoggistängeli-Schlangen)

These bread snakes containing a wrapped or unwrapped Schoggistängeli or Branchli, a popular chocolate stick weighing about 25 grams, are popular for school birthday snacks. The bread is made with Zopf dough, an enriched dough with butter, which makes this snack even a better treat. These kind of chocolate sticks are difficult to buy in other countries but you can always substitute them with some other chocolate. For those in Switzerland, look out for the promotions in Coop and Migros which happen every 6 months or so when you can buy a box of 50 sticks for nearly half-price.

Recipe

  • 500g of Zopf bread dough according to our recipe
  • 5 Branchli chocolate sticks
  • 10 sugar eyes (available in Coop)

Method

Prepare Zopf dough and let it prove for 1-1.5 hours until doubled in size.

Make five sticks the size of a chocolate stick, using aluminium foil.

Cut proved dough into five equal parts and make long rolls. Wrap the bread rolls around the aluminium foil sticks. Place the snakes onto a baking tray covered in baking parchment, cover with a kitchen towel and prove for another 30 minutes.

Crack the egg into a small bowl and using a brush, cover the snakes with the egg wash.

Bake at 200 degrees C for 20-30 minutes, depending on the size of your snakes. They’re baked enough when sounding hollow when knocking the base with your finger.

Let them cool down, glue on the eyes with a little sugar water and replace the foil with the chocolate sticks.
